Iñigo used three different vineyards to create his Mencos. These are located north of the bodega on the slopes of the river Ebro. These three vineyards are in possession of Iñigo’s family since 1252. The vineyards have a very interesting soil composed of calcareous clay and a layer of eroded rock material. A soil in which roots of the old vines can deeply penetrate, making them stronger and healthier. The vineyards are on an altitude where they profit from both cool air and a Mediterranean breeze. The vinification took place in stainless steel vats, followed by maturation of fourteen months in barriques of both French and American oak. After this process the wines will be matured in a bottle for a year in the in the cool cellars of the winery.
