La BIO IDEA pasta is made in Sicily by Fattoria Barbagallo, a family company that was founded in 1911. The Barbagallo 's are, for almost 100 years making the most delicious Italian pasta from the best durum wheat from Sicily. In 1991, the partnership began with La BIO IDEA and now the pasta is available in health food stores across Europe. Angelo Barbagallo of third generation now holds sway over the pastafabrication where the wheat is completely processed from grains to the packaged pasta. The making of good pasta requires skills. It is not just the right ingredients in the right proportions, but also good quality of the wheat dough and the right pasta shape is important. La BIO IDEA pasta distinguishes itself from many other (also organic) pasta. Barbagallo himself assess the quality grinds wheat flour in 12 steps and dries the shaped pasta slowly at low temperature. All that is essential for the final quality of La BIO IDEA pasta. If it slides into the boiling water a subtle scent fills the kitchen and an you can experience an exceptional taste
